Cooking Through Magnolia Table In A Year: Week 30

30 weeks down! When I think about 2022, it seems that the year is moving by pretty quickly, but nothing confirms that quite as much as when I realize that we are 30 WEEKS into our cooking through Magnolia Table in a year challenge. Wow – time really does fly by. Thankfully this year-long journey has been one filled with wonderful and tasty adventures that has made the time quite memorable. In fact, this week brought us several wonderful recipes including Garlic & Herb Tomatoes (p.183), Cod in Parchment With Lemon & Vegetables (p.237) and Broiled Honey – Thyme Peaches (p.281) which all came together to make a most delicious dinner. 

Garlic & Herb Tomatoes 

Simple, but extraordinarily delicious, these Garlic & Herb Tomatoes are so wonderful. Fresh with a burst of flavor, each tomato is savory and sweet with flavors that embody a wonderful pasta sauce. This recipe is so simple and Joanna’s directions are very thorough, making it a quick dish to add to dinner. If you are not a tomato fan, then obviously, these likely won’t appeal to you, but if you like tomatoes or have a garden full of cherry tomato delights, then I highly suggest adding this recipe to your list to try.

As Charlie and I thoroughly enjoy tomatoes, we gave these Garlic & Herb Tomatoes an average rating of 8.5! This recipe came at such a perfect time as our tomato plant (read more about how you can start your own garden HERE!) is absolutely laden with cherry tomatoes. As we have many more tomatoes ripening on the vine even now, I am sure this recipe will make it back to our table in the days to come.

Cod In Parchment With Lemon & Vegetables

Having never had Cod to my knowledge, I was intrigued to try this savory fish recipe. Filled with vegetables of squash, carrots and fennel, this recipe is fabulously healthy and feels extremely fresh. I was taken by surprise however by the intense spice of the added red pepper flakes, however they did add a unique twist when paired with the white flaky fish and a vegetable/lemon assortment.

Crowd Average Rating:

Despite the wonderful ingredients, this recipe gained an average rating of 6. While I loved how healthy this meal was, I was a little underwhelmed at the flavor of the dish. That being said, we thought that the flavors were much better the second day, after everything had melded together overnight. Similarly, I am not a huge fan of spicy foods, so the red pepper flakes gave this recipe a bit more heat that I would have preferred. Overall, if you enjoy spicy foods and are looking for an unusual healthy fish recipe, I most certainly would recommend, however I am not sure that it will become a staple around our table.

Broiled Honey – Thyme Peaches

While I laid out the progression of these recipes months ago, I somehow must have known that this recipe would be saving the best of the week for last.  Absolutely delicious, these Broiled Honey Thyme Peaches have flavor combinations that I have never experienced. Imagine warm honeyed peaches with a touch of thyme and tangy balsamic vinegar all spilled over vanilla ice cream. Just thinking about this recipe has me craving them, so I most definitely recommend testing it out for yourself.

With such a wonderful mix of flavors, these Broiled Honey Thyme Peaches gained an average rating of 9! As our highest rated recipe this week, I certainly suggest checking it out, especially while we are in peach season. While I do not have any suggestions for the future, I do recommend eating this dish as soon as it is made, as otherwise your peaches and ice cream will turn into a melty peach soup (still delicious but not quite as presentable!).

Coming up in week 31 within our Cooking Through Magnolia Table In A Year Guide, this upcoming week will feature Sour Cream Chicken Enchiladas (p.193), Mexican Rice (p.195) and Lemon Bundt Cake (p.301). If you have any remaining lemons or tomatoes from this past week, hold on to them because they will work perfectly in this week’s recipes. As I have been spoiled by my grandma’s Lemon Cake recipe, I am very excited to see Joanna’s version and how they might compare. 

Final Thoughts

While some weeks have recipes filled with sour cream and cream cheese, this week’s recipes were all very healthy which was much appreciated! As much as I love a good creamy dish, having a fresh healthy week thrown in there every once and a while is always enjoyed. If you cooked along this week, what were your thoughts?
