Happy Halloween!! We officially have less than 10 weeks left of cooking through Magnolia Table in a year. What a journey! I feel like the countdown is on, but I want to savor these last weeks of this experience and of 2022. These next 9 weeks are some of my absolute favorites of the year and I am thrilled to be sharing our Magnolia Table moments at the same time.  This week of Magnolia moments brought us The Best Ever Fluffy Pancakes (p.51) and Cinnamon Swirl & Walnut Quick Bread (p.58) which both were tremendous. While our Sunday dinner crowd last night also reviewed a couple of the recipes for this upcoming week and topped dinner off with the delicious Cinnamon Swirl & Walnut Quick Bread (it can float between breakfast and dessert easily!), we had the most wonderful combination of fall recipes that perfectly summed up October.

The Best Ever Fluffy Pancakes

Despite the rather bold claim within the title of the recipe, the final product most certainly lives up to its name. Light, fluffy, and delicate, these pancakes are stunning both in their golden brown nature and sweet, airy like texture. Whether plain or dressed up with chocolate chip additions, these pancakes are a wonderful breakfast treat that will have people coming back for seconds. Completely different then the surprise of Joanna’s past delicious, but dense Ricotta Pancakes, these Best Ever Fluffy Pancakes are exactly how you would imagine them and perhaps, even all you could ever hope for in a breakfast plate of pancakes.

Crowd Average Rating:

Much to our happy surprise, these pancakes gained an average rating of 9! While I am a Bisquick pancake gal out of habit, these Best Ever Fluffy Pancakes will most certainly be making it back to our table in the future. The combination of buttermilk and baking powder do provide an extremely fluffy result that just blows our Bisquick pancakes out of the water.

Cinnamon Swirl & Walnut Quick Bread

I am not sure if bread or coffee cake is a better description for this recipe. But regardless of its name, this Cinnamon Swirl & Walnut Quick Bread is absolutely delicious. Being that it does have a decent amount of cinnamon and Charlie can’t eat much cinnamon, I decided to change up the recipe type and serve the Quick Bread as a dessert option at our Sunday dinner. While this recipe is supposed to be a breakfast treat, it also was very well received as a dessert which perfectly concluded our fall dinner of Autumn Butternut Squash Soup and Sunday Supper Beef Tips. Not too sweet with a crunch of walnuts, this bread is light, fluffy and very simple to pull together. If you do not already have a great fall quick bread or coffee cake recipe, I most definitely would recommend this one!

Crowd Average Rating:

For maybe the first time ever, both of our recipes this week gained average ratings of 9! In fact, everyone around our table rated this cinnamon bread a 9, except for one person who rated it a 10! In the future, I might decrease the cinnamon sugar filling just the slightest amount, but otherwise will not change a thing. The general consensus was that it would also be amazing served warm, so whether you can heat it up upon serving or serve it fresh from the oven, it would be fabulous.

I typically have not been a big squash soup person, however I am very excited to give Joanna’s version a try.

Final Thoughts

This must have been the week of the nine’s with only 9 weeks left in our cooking adventure and both recipes receiving crowd average ratings of 9! Regardless, each of these recipes will certainly be coming back around our table in 2023 and down the road, long after our cooking challenge has ended. It has been a joy to catalog this journey with you and I hope that if you have cooked along with us, that it has been a blessing to you as well. Did you enjoy this Cinnamon Swirl & Walnut Quick bread as much as we did? I would love to know in the comment section below!

Happy cooking!
