Springtime Dessert: Amazing White Chocolate Swirl Rice Krispie Treats

While there is a plethora of dessert recipes on the internet or in favorite cookbooks, it sometimes can be a challenge to find a recipe that pleases the whole family. For my family at least though, I have found that almost everyone is up for a Rice Krispie Treat. Homemade Rice Krispie Treats are a treasure that are so gooey, chewy, and delicious that many of us snag one for an afternoon snack almost as quickly as we do for dessert. With many variations and holiday renditions out there for Rice Krispie Treats, I wanted to make a quick and easy spring dessert that did not have endless steps, directions, dipping or baking, while still exciting the whole family. Perfect for layering throughout an Easter sweets charcuterie board, creating a platter of sweets for an office celebration or simply serving on a dish to friends and family, these White Chocolate Swirl Rice Krispie Treats are festive, delicious and could be adapted with coloring to any celebration or holiday needed.
Rice Krispie Treats
One of my favorite recipes for traditional homemade Rice Krispie Treats is The Brown Butter Rice Krispie Treats With Sea Salt created by The Pretty Life Girls. First introduced to me by my lovely sister-in-law, I found that these truly have the best rich buttery and nutty flavor within each bite. While not browned and with a touch of vanilla, the base of the White Chocolate Swirl Rice Krispie Treats does highlight a touch of salt similar to The Brown Butter recipe which enhances the flavor dramatically. Soft and delicious, this recipe is sure to be a crowd pleasure.
White Chocolate Swirl
Much like variations for “adult” mac and cheese, the white chocolate swirl topping helps to elevate these Rice Krispie Treats from the peewee sports game treat provided by team moms. While I love a Rice Krispie Treat anytime, they can be thought of as a childhood snack and aren’t as likely to make it to your Easter dessert spread. However, adding a slight white chocolate swirl ganache on top not only provides attractive spring coloring, but also make it a dessert with a twist that appeals to adults and kids alike. The swirled coloring is such a fun touch and if making with kids, will be a part they very much enjoy.
White Chocolate Swirl Rice Krispie Treats
Ingredients
- 1 stick Salted Butter
- 1 10 oz Bag Of Miniature Marshmallows
- ½ tsp Vanilla Extract
- ¼ tsp Salt
- 6 cups Rice Krispie Cereal
- 1 12 oz Bag of White Chocolate Chips
- ¼ cup Heavy Whipping Cream
- Gel Food Coloring Of Choice
Instructions
- Spray an 8 or 9-in square glass pan with non-stick spray.
- In a large pot, melt butter over medium heat until it is a rich golden color and is very frothy.
- Turning the heat to low, add in the vanilla extract and stir to combine.
- Continuing with the heat on low, add in the bag of miniature marshmallows and stir until marshmallows are melted and smooth.
- Removing the pot from the heat, stir in the salt and Rice Krispie cereal. Once fully combined, pour into prepared pan and level out with a silicone spatula, parchment paper or spoon sprayed with oil.
- Once the rice krispies are fully compacted, pour white chocolate chips and heavy cream into microwavable bowl.
- Microwave the chocolate and cream for about 45 seconds in 15 second intervals. Be sure to stir in between intervals. If chocolate is melting thoroughly with less time, just stir until combined. Be sure not to burn the chocolate mixture.
- Remove chocolate from microwave and stir until cream and chocolate is fully combined with a smooth consistency.
- Pour chocolate mixture over the Rice Krispies. Working quickly (see note 1), add a few drops of gel food coloring (see note 2) to the top of the white chocolate ganache and swirl with a toothpick or knife.
- Let set for about 30 minutes or until ganache is firm. If you need it to firm up more quickly, place the pan in the refrigerator.
- Once firm, cut the pan into 9 squares. Remove the squares from the pan and then cut each square in half, providing 18 pieces.
- Keep at room temperature for up to 2 days and refrigerate after that. Enjoy!
Notes
- The white chocolate ganache will set fairly quickly, so be sure to add in the gel to swirl as soon as possible.
- Gel food coloring provides color without adding liquid or a runny texture of traditional food colorings.
Final Thoughts
With a beautiful blend of sweet and salty, these White Chocolate Rice Krispie Treats are such a fun addition to any celebration (much like this Holiday Trifle!). Even though I made them here as a spring dessert, I definitely am interested in adapting them with red and blue swirls for the 4th of July, blue and pink for a baby shower or even red and green for Christmas!
