What would make your Valentine’s Day feel special? Is it a night out dressed to the nines, a home cooked meal and movie night in or a picnic in the park? While I believe each can be equally special and a perfect way to celebrate, so much of having a special Valentine’s Day is knowing the person you are celebrating it with. So, when I was thinking of fun Valentine’s Day celebrations this year that would be a bit more lowkey as we settle in with a newborn but also would mean a lot to Charlie, I immediately landed on the idea of making his favorite treat: muffins! Certainly, muffins may not rank in everyone’s favorite list of foods, but for Charlie they are the perfect way to start the day. Seeing this, I opted to create a recipe to combine two of his favorite flavors, strawberry and chocolate chip, arriving at these delicious Strawberry Chocolate Chunk Streusel Muffins. Truly, whether your love is a muffin connoisseur or you are looking for a great breakfast or brunch recipe the whole family will love, this recipe makes for a wonderful way to start your Valentine’s Day, so let’s dive in!
Creating A Strawberry Base
The first special element of these delicious Strawberry Chocolate Chunk Streusel Muffins is their light strawberry base. While many muffin recipes use buttermilk, sour cream or plain yogurt to help enhance both the flavor and fluffiness of the muffin base, these muffins use strawberry Kefir or strawberry Greek yogurt mixed with a bit of water to create a subtly strawberry flavored muffin base. The strawberry Kefir is preferred here to provide a similar light texture and acidity to buttermilk, however if you cannot find strawberry Kefir, thinning strawberry Greek yogurt with a bit of water can create a similar effect. This subtle change from a traditional dairy product makes for a lovely strawberry flavor throughout the muffin that then is further enhanced by the addition of chopped strawberries. By the inclusion of both chopped strawberries and strawberry Kefir / yogurt, these muffins are both wonderfully moist and fabulously flavorful.
A Highlight Of Chocolate
If a strawberry muffin isn’t enough, why not add a highlight of chocolate! Chocolate dipped strawberries are such a classic Valentine’s Day staple that adding a touch of chocolate to the strawberry base of these Strawberry Chocolate Chunk Streusel Muffins felt like the perfect touch. I would recommend including a 60% to 70% dark chocolate to provide a bit of contrast to the sweet strawberries without being too stark. If opting for a darker chocolate than a low 70 or 72%, try to stick with a chocolate that has a fruity base instead of one that leans earthy or nutty to ensure the muffin has a cohesive flavor.

Topping With Streusel
While adding the streusel topping is totally optional, I believe the textural change and shortbread-like flavor of the topping really rounds out this dynamic muffin. Certainly, you don’t have to add this element if streusel isn’t your favorite, however for both appearances and flavoring, I believe the topping is worth the extra couple of minutes.

Strawberry Chocolate Chunk Streusel Muffins
Ingredients
Muffins
- 1/2 cup Butter, melted
- 3/4 cup Strawberry Kefir OR 1/2 cup strawberry Greek yogurt thinned with 1/4 cup water
- 2 Eggs
- 3/4 cup Sugar
- 2 tsp Vanilla extract
- 2 cups + 1 tbsp All purpose flour
- 1 tbsp Baking powder
- 3/4 tsp Salt
- 1/2 cup Strawberries, diced
- 100 grams Dark chocolate, chopped 60% – 70% dark is recommended
Streusel Topping
- 2 tbsp Butter, melted
- 4 tbsp All purpose flour
- 1 tbsp Sugar
Instructions
- Preheat the oven to 425℉ or 220℃. Line a muffin tin with muffin cups before setting aside.
- In a large bowl, mix together the melted butter, strawberry Kefir (or thinned Greek yogurt), sugar, eggs and vanilla extract.
- Next, fold in 2 cups of the all purpose flour, baking powder and salt until just combined. Be sure not to overmix.
- Slowly fold in the chopped chocolate (or chocolate chips), chopped strawberries and remaining 1 tablespoon of all purpose flour.
- Scoop the batter into the prepared muffin cups, filling just shy of the top of each cup.
- In a small bowl, combine the melted butter, flour and sugar for the streusel topping until it comes together in small clumps. Sprinkle the top of each muffin cup with a bit of this topping.
- Bake for 5 to 7 minutes at 425℉, then, without opening the oven door, reduce the heat to 350℉ (or 180℃) and bake for another 15 minutes or until a toothpick inserted into the center of the muffin comes out clean or with only a couple of crumbs.
- Remove from the oven and allow to cool for 10 minutes before transferring to a rack to fully cool or a plate to serve. Muffins can be stored at room temperature for up to 3 days (if they last that long!). Enjoy!
