White Chocolate Swirl Rice Krispie Treats

Ingredients

  • 1 stick Salted Butter
  • 1 10 oz Bag Of Miniature Marshmallows
  • ½ tsp Vanilla Extract
  • ¼ tsp Salt
  • 6 cups Rice Krispie Cereal
  • 1 12 oz Bag of White Chocolate Chips
  • ¼ cup Heavy Whipping Cream
  • Gel Food Coloring Of Choice

Instructions

  • Spray an 8 or 9-in square glass pan with non-stick spray.
  • In a large pot, melt butter over medium heat until it is a rich golden color and is very frothy.
  • Turning the heat to low, add in the vanilla extract and stir to combine.
  • Continuing with the heat on low, add in the bag of miniature marshmallows and stir until marshmallows are melted and smooth.
  • Removing the pot from the heat, stir in the salt and Rice Krispie cereal. Once fully combined, pour into prepared pan and level out with a silicone spatula, parchment paper or spoon sprayed with oil.
  • Once the rice krispies are fully compacted, pour white chocolate chips and heavy cream into microwavable bowl.
  • Microwave the chocolate and cream for about 45 seconds in 15 second intervals. Be sure to stir in between intervals. If chocolate is melting thoroughly with less time, just stir until combined. Be sure not to burn the chocolate mixture.
  • Remove chocolate from microwave and stir until cream and chocolate is fully combined with a smooth consistency.
  • Pour chocolate mixture over the Rice Krispies. Working quickly (see note 1), add a few drops of gel food coloring (see note 2) to the top of the white chocolate ganache and swirl with a toothpick or knife.
  • Let set for about 30 minutes or until ganache is firm. If you need it to firm up more quickly, place the pan in the refrigerator.
  • Once firm, cut the pan into 9 squares. Remove the squares from the pan and then cut each square in half, providing 18 pieces.
  • Keep at room temperature for up to 2 days and refrigerate after that. Enjoy!

Notes

  1. The white chocolate ganache will set fairly quickly, so be sure to add in the gel to swirl as soon as possible.
  2. Gel food coloring provides color without adding liquid or a runny texture of traditional food colorings.
