Cooking Through Magnolia Table In A Year: Week 45

Week 45! It is crazy to think that we only have 7 more weeks and 18 recipes to go in our cooking through Magnolia Table in a year journey. This week brought us Souffleed Broccoli Casserole (p.171), Almond Chicken Tenderloins (p.211) and Mocha Trifle Cups (p.289). While only Charlie and I got to enjoy the broccoli casserole and chicken tenderloins, we did get to share the Mocha Trifle Cups with my family for a special treat and truly, they were such a hit, they have already been requested back for a Thanksgiving dessert. 

Souffleed Broccoli Casserole

When Charlie first heard that we were having a broccoli casserole, he said he felt he was back at a church picnic since it had been so long since he had eaten one. Unlike many classic broccoli casseroles that are dense and cheesy however, this broccoli casserole has the souffleed egg component which makes it extremely fluffy. Quite flavorful, this casserole is fluffy and delicious and while it does have several eggs, the other sauce and cheese additions prevent it from having any egg flavoring. We enjoyed this recipe with the Almond Chicken Tenderloins for dinner, but it also would be delicious for a brunch side. 

Crowd Average Rating: 

While not our highest rating recipe, this Souffleed Broccoli Casserole was enjoyed and gained an average rating of 6.5! I am not sure that I would change anything if I made it again, however I would recommend sharing this recipe with others as a 9×13 casserole dish certainly makes a gracious plenty! If traditional broccoli casserole is a go to dish for your Thanksgiving, you just might try out this version for a fun little twist.

Almond Chicken Tenderloins 

As Joanna mentions in her description, these Almond Chicken Tenderloins are a great “adult” chicken finger option. Flavorful, crispy and very tender, each bite of this chicken was wonderful. The crispy coating blended with the nutty almond flavor and the touch of lemon gave almost a schnitzel feeling to the chicken. Other than not being tenderized flat, I would say that these tenderloins very much resembled an individual portion of schnitzel which we both thought was delicious!  

Crowd Average Rating: 

Slightly higher than the broccoli casserole rating, these Almond Chicken Tenderloins gained an average rating of 7! Delicious and savory, these tenderloins provided a solid dinner that would appease adults and kids alike. I do think that in the future, I will add a squeeze of lemon even on the leftovers as the lemon seemed to dissipate once reheated. Other than that, they do reheat nicely and are still very tasty.

Mocha Trifle Cups

I have to confess…this was not the first time that I had made these amazing Mocha Trifle Cups, so I knew they were going to be delicious. That being said, it was the first time that several within my family got to try them and let me tell you, they were very much enjoyed. Rich, creamy and not too sweet, these Mocha Trifle Cups are simply wonderful. I made mine in Hearth & Hand sundae/parfait cups and this serving size could almost be shared by two, depending on how hungry you are! While my specific cups have been discontinued, they do still have lovely parfait cups which are even shown featuring this recipe! 

Crowd Average Rating: 

With the highest rating of the week, these Mocha Trifle Cups gain an average rating of 9! With only one rating below a 9, four at 9 and one all the way at a 10, I would say that they were well loved. This recipe is very rich however, so I do advise adding in the whipped cream on top to help refresh the palette.

Looking ahead to week 46 within our Cooking Through Magnolia Table In A Year Guide, this upcoming week will feature Roasted Cauliflower Soup (p.104) and White Bean Hummus (p.153). I absolutely love hummus and think that this week’s weather is perfect for soup, so I am really looking forward to trying out these dishes! 

Final Thoughts

As this week is supposed to be cold and chilly, I am so looking forward to another soup recipe! Like so many of the recipes that we have tried through this year-long journey, Joanna Gaines soups will most certainly make our short list for years to come.
